One-Dish Meal Casserole
Ingredients
1lb ground beef
2 tbsp cooking oil
1/2 cup chopped onions
1 (8oz) can tomato sauce
2 1/2 cups of hot water
2 cups of egg noodles, uncooked
1/2 tsp chili powder
1 1/2 tsp salt
1/4 tsp pepper
2 tsp Worcestershire sauce
1 cup sharp cheddar cheese, grated
1 (15oz) can cream-style corn (optional)
Directions
1. Preheat oven to 350 degrees
2. Brown beef in oil
3. Stir together beef, onion, tomato sauce, hot water, noodles, chili powder, salt, pepper, Worcestershire sauce, cheese and corn.
4. Spoon into a 9x13 baking pan
5. Bake for 40-50 minutes, until noodles are tender
Creamed Chicken and Biscuits
Ingredients
1/2 large chopped onion
1 1/2 teaspoon butter
4 cups chopped cooked chicken
1 (10 3/4 oz) can cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup chopped pimiento (optional)
1 cup shredded mild cheddar cheese
6 frozen biscuits, thawed
Directions
1. Preheat oven to 350 degrees.
2, Grease the bottom and the sides of a 11x7 baking dish.
3. Chop the onion. Heat the butter in a small nonstick skillet over med-high heat until melted. Stir in onion. Saute until tender.
4. Combine onion, chicken, soup, sour creme, milk and pimiento in a medium bowl and mix well.
5. Spoon mixture into prepared baking dish. Bake for 15 minutes and then remove from oven.
6. Sprinkle baked layer with 3/4 cup of cheddar cheese. Arrange biscuits in a single layer over top. Sprinkle with remaining cheese
7. Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes.
BBQ Wieners
Ingredients
4 packages of cocktail wieners (little smokie sausages work great)
1/2 box of brown sugar
1 bottle of honey barbecue sauce
1 cup of water
Directions
1. Pour wieners into a crock pot.
2. Add half the brown sugar and half the bottle of barbecue sauce and mix well.
3. Pour in the water, the rest of the brown sugar and the barbecue sauce and mix well.
4. Cook over high heat for 1 hour.
5. Remove lid, stir and cook over medium heat until ready to serve, or at least 2 more hours.
Chunky Potato Soup
Ingredients
3 medium red potatoes
2 cups water
1 small onion
3 tbsp butter
3 tbsp all-purpose flour
crushed red pepper flakes
ground black pepper
3 cups milk
1/2 tsp sugar
1 cup shredded cheddar cheese
1 cup cubed cooked ham
Directions
1. Peel potatoes and cut into 1-inch cubes
2. Bring water to a boil in a large saucepan
3. Add potatoes and cook until tender
4. Drain, reserving liquid and set potatoes aside
5. Measure 1 cup cooking liquid adding water, if necessary and set aside
6. Peel and finely chop onion
7. Melt butter in saucepan over medium heat
8. Add onion to saucepan, cook, stirring frequently until onion is clear and tender, but not brown.
9. Add flour to saucepan, season with black pepper and pepper flakes to taste. Cook 3-4 minutes
10. Gradually add potatoes, reserved 1 cup of cooking liquid, milk and sugar to onion mixture in saucepan and stir well
11. Add cheese and ham
12. Simmer over low heat 30 minutes, stirring frequently
Quick Chili and Rice Dinner
Ingredients
3/4 lb ground beef
1/3 cup chopped onion
1 tbsp chili powder
1/4 cup dry mustard
1 pkg. (10oz) Birdseye sweet whole kernel corn
1 cup diced green pepper
1 can (15oz) tomato sauce
1/2 cup water
1 cup rice
1/2 cup shredded cheddar cheese
Directions
1. Brown beef and onion in skillet
2. Add spices, corn, green pepper, tomato sauce and water
3. Cover and bring to a boil (stirring occasionally)
4. Stir in rice, reduce heat, cover and simmer for 5 minutes
5. Sprinkle with cheese
