Top Five Easy-To-Make Chicken Dishes!!!!

Chicken-capsicum masala

Ingredients: Capsicum - 2 big ones cut lengthwise, Boneless chicken, cubed - 400 gms , Onion - 1 big one finely chopped, Tomatoes - 2 medium finely chopped, Ginger Garlic paste - 1 1/2 tsp, Tomato paste - 1 tsp OR tomato puree - 2 tbsp, Cashews - 2 tsp, Milk - 2 tbsp, Cream - 1 tbsp, Cumin Powder - 1 1/2 tsp, Red Chilly powder - 1 tsp, Turmeric powder - 1 tsp, finely chopped coriander leaves - 2 tsp, Butter, salt to taste.

Method : Take a heavy bottomed vessel and add butter to it. When butter heats up, add turmeric powder. Now add ginger garlic paste and onions and fry till onions are slightly brown in color. Then add finely chopped tomato and fry for a minute. Make a fine paste of cashews and milk by grinding it in a mixer. Now add the tomato paste, cashew paste, red chilly powder and cumin powder and fry for a minute. Let this mixture cool for about 10 minutes and then grind it in a mixer to a fine paste. (This paste will be nice orange in color). Take a vessel and heat butter. To this add capsicum and fry for about 5 minutes. Then add the fine paste. Let it boil for a few minutes. In another pan heat some butter and shallow fry boneless chicken cubes. Add this to the above mixture and fry for a few minutes, till the chicken is fully cooked. Add beaten cream to this mixture and garnish it with finely chopped coriander leaves. Serve hot with rotis, naans or parathas.

Sweet and Sour Chicken

Ingredients:Tomatoes-4 (big), Cornflour-2 to 3 tbsp dissolved in water, boneless chicken, cubed-400 gm, Sugar 2-3 tsp, Salt as per taste, Pepper-1/4th tbsp,1 tbsp Chilly sauce, 1 Cheese cube shredded, A handful each of Beans, Capsicum, Cabbage, Peas.

Method: Cut the vegetables into thin long pieces. Put tomatoes in hot water. Remove skin and make puree in mixer. Marinate chicken pieces in 1 tbsp chilly sauce or ginger-garlic-chilly paste for about an hour. Later fry and keep aside. Put the vegetables in boiling water for few minutes, strain them and keep aside. Boil the tomato puree. Add to it the corn flour paste, sugar, salt and pepper. Keep stirring whilst boiling. Add the vegetables and then after 3-4 minutes add the boneless chicken cubes. When done garnish with cheese shreds.

Chilly Chicken

Ingredients:500gm boneless chicken, rolled into small balls, 4 tbsp Corn Flour, Green Chilly (10 to 15 medium size), 2 tbsp Tomato Sauce,1 tbsp Chilly Sauce, 2 tbsp Soya Sauce, Salt to taste, Oil, 1 green Capsicum, 4 onions.
Method: Mix chicken balls with corn flour in dry condition and fry it with oil in a wok till it become brown. In a separate wok, fry onion with oil till brown. Cut green chilly into small pieces and add it to fried onion. Then put small cut piece of capsicum and fry it for sometime. Add fried chicken balls to it. Then add tomato/chilly/Soya sauce into the pan. Add salt and stir it for 3/4 mints. Now the item is ready. Serve it hot with Naan or Parathas.

Chicken Butter Masala

Ingredients: 500 gm boneless chicken-cubed, 200 gm Fresh Cream, 200 gm Tomato Puree, 2-3 tbsp Butter, 2 tbsp Dried Fenugreek leaves, 1/2 tsp Red chilly powder, 1/2 tsp Hot spice mix powder(readily available as Garam Masala), 2-3 Green Chilies, Salt as per taste
Method: Melt the butter in a pan, add slit green chilies, tomato puree, dried fenugreek leaves, salt, red chilly powder and simmer for 4-5 minutes. Add the cream and hot spice mix powder and cook further for 2-3 minutes. In a separate wok, add 2-3 cups of water to the chicken pieces and boil till the chicken is tender. Add the contents from the pan in the wok and cook on low heat till done. Serve hot garnished with coriander.

Stuffed Chicken

Ingredients:500 grams boneless chicken, 350 grams Boiled Potatoes, 40 grams Onion (cut into small pieces), 15 grams Garlic, (grated), 15 grams, Ginger (grated), 2-3 Green Chilies, 1 teaspoon Cumin seeds, 1 teaspoon Mustard seeds, 4-6 Curry Leaves,1 teaspoon Red Chili powder, 2 tablespoon Coriander Leaves chopped, 200 grams Gram Flour, Salt to taste, Oil for frying, Lemon Juice of 2 lemons.

Method: Cut chicken pieces into squares of about 1.5 inch wide. Marinate these chicken pieces in salt and lemon juice and keep aside while you prepare the stuffing. Mix gram flour, water and salt into mixture and keep it aside. This mixture should not be thin but thick. In a wok heat some oil and add cumin seed, mustard seeds and curry leaves and fry for few seconds. Next add onion, garlic and ginger and fry till golden in colour. Now mix mashed potatoes and keep on stirring for 5 minutes. Also stir in the green chilies and red chilies. When this is done let it cool. Now take out the chicken pieces from the marinade and put a thick coating of potato on each piece. Heat oil and dip these chicken pieces in gram flour mixture and deep fry in oil till little red in colour. Enjoy this snack with tomato ketchup.

To make these chicken dishes, marinate the chicken oieces with fresh Lemon juice, along with pinch of salt, red chilly powder and Turmeric powder for atleast one hour.
