Top Five Salad Recipes for Sandwich Spreads

Everyone needs to have some quick salad recipes for sandwich spreads to make and serve when a plain sandwich will not do. Here are five easy ways to make sandwiches elegant enough for company or gatherings.

1. Pimento Cheese
Mix a package of grated sharp cheddar and a jar of pimentos, undrained. The measurements are: 2 cup package of cheese to a large jar of pimentos or a 1 cup package of cheese to a tiny jar. Add a tablespoon or two of mayonnaise, to your preference, and mix well. Salt and pepper liberally.

2. Tuna Salad
This is quick way to make tuna salad, but it needs to chill for an hour or so before eating. Mix 1 pouch of tuna (better than can) and the following: 1 tablespoon dried, minced onions, 1 tablespoon of sweet pickle relish, and 1-2 Tablespoons of mayonnaise, and a dash of pepper.

3. Chicken Salad
Mix a can of chicken or leftover cooked chicken with the ingredients for above tuna salad recipe for a basic spread. You can add almost anything to a chicken salad: raisins, grapes, nuts, celery, onion, pineapple, apples, etc...There are so many gourmet chicken salad recipes, so create your own variation! I like apples and curry.

4. Ham Salad
Ham salad can be made out of leftover cooked ham or ham purchased in the can for a dollar or so. Add 2 tablespoons of pickle relish, 1-2 tablespoons of mayonnaise, and a 1/2 teaspoon of peanut butter. If you don't like the nutty taste, you can leave that out.

5, Cream Cheese and Olives
Another of my mother's favorite salad recipes for sandwich spreads, this one is particularly elegant. Allow a block of cream cheese to soften, chopped cocktail olives (green with pimento in them) and a tablespoon or two of mayonnaise.

Final Thoughts
It is always good to have a few salad recipes for sandwich spread to prepare for company or gatherings that require that you bring sandwiches. You can also serve the spreads as a dip for crackers or by the scoop as the centerpiece of a salad.
