Green Chicken Enchiladas
Ingredients:
1 pound skinless, boneless chicken breast halves
12 corn tortillas
4 or 5 tomatillo
clove
piece of garlic
pinch of salt
1 onion
1 or 2 jalapenos ( you can use half of a jalapenos so that it won't be to spicy )
oil ( this can be any kind of oil you like to use to fry )
Shredded cheese of your choice
Instructions:
Fill a pot up with enough water to cover the chicken. Add half of an onion and a pinch of salt to the chicken.
Boil the chicken for about 25 minutes or until it is easy to shred. Next Drain the chicken, let it cool off a bit, and then shred it in strands.
Put a pot of water to boil with jalapenos, tomatillos and a small piece of onion. Boil for about 10 minutes or until tomatillos turn a dark green.
Making the sauce : Blend the tomatillos, jalapenos, onion, clove, garlic, and a pinch of salt for about a two minutes or until it is well blended.
Lightly fry the tortillas in oil. Don't fry them to much. Just, enough so the can still bend.
Put a fry pan with a little bit of oil, let it get hot then pour the sauce you just blended. Put the stove on very low. It should be kind of watery.
Then start dipping your tortillas one by one in the sauce. Add a little bit of chicken and cheese to the tortilla. Next roll it up like a taco. Do the rest of the tortillas the same way. Whenever you are finished add cheese and a little bit of the sauce on the top of the enchiladas. Now they are ready to serve. Enjoy
Mexican Chicken
Ingredients:
Chicken ( it can be a whole chicken or chicken drumstick )
5 tomatoes
1 onion
garlic
2 jalapenos
pinch of salt
pinch of cumin
First, you need to boil the chicken, put enough water to cover the chicken. Add a pinch of salt, a piece of garlic and a small piece of onion to the chicken.
Second, slice the jalapeno, onion, and tomatoes in small slices. Put the tomato, onion, and jalapenoin a bowl. Add a pinch of salt and cumin to the vegetables.
When the chicken is fully cooked, add a little bit of oil to a frying pan. Put your chicken in to fry. In about 5 minutes add the vegetables to the chicken.
Let it cook together for about 8 to 10 minutes or until the onion is cooked. Wallah you are ready to enjoy this great recipe! You might be wondering why it's called Mexican chicken? Well the vegetables have the same color as the Mexican flag. Green ( jalapenos) , white (onion) , and red (tomatoes).
Chicken Fajitas
Ingredients:
Chicken breast
bell peppers
tomatoes
onion
cumin
salt
flour tortillas
Instructions:
Slice the chicken, tomatoes, bell peppers, and onions in small slices. Put a frying pan with oil on the stove. Fry the chicken until fully cook. After the chicken cooks add the bell peppers, tomatoes, onion, pinch of salt and cumin all together. Let cook for about 15 minutes. Heat up your flour tortillas. Now , you are ready to enjoy your chicken fajitas.
This are my favorite three Mexican recipes. Now you know how to make them. So now you don't need to go to a Mexican restaurant to eat these tasty foods. Enjoy these tasty homemade recipes at home without going to a restaurant somewhere else.
