Treat Your Girlfriends to a Great Valentine's Day

Valentine's Day is a Great Time to Remember the Women We Love Too!

No, this isn't an article targeted toward men, so forget about it! This is an article strictly for the girls. Valentine's Day can be a miserable holiday for single women. Why not get the girls together for the evening and celebrate with great food, drinks and entertainment?

Here are a few suggestions for a great Valentine's Day celebration for girlfriends:

Cocktail: Mix up a pitcher of Classic Cosmopolitans

Combine 3c Vodka, 1.5c Triple Sec, 1c Cranberry Juice and 1/2c Lime Juice in a small pitcher about 1/3 full of ice. Stir and serve in chilled cocktail glasses.

Appetizer: Shrimp Cocktail

Pick up some cooked and peeled cocktail shrimp and ready made sauce at your local grocery store. Use one large wine glass for each appetizer. Place a small nest of shredded lettuce in the bottom of each glass. Add a dollop of cocktail sauce in the center of each nest of lettuce. Hook shrimp over the edge of the glass. Serve cold.

Dinner: Butterfly Chicken Breast Fillets, steamed long grain and brown rice and broccoli.The calories you save on dinner can be spent on dessert!

Prepare one chicken breast for each guest. To prepare breasts, slice each horizontally to ½ inch of cutting through. Open the breast like a book and you'll have a lovely heart shaped chicken breast. Rub 1 teaspoon olive oil, ¼ teaspoon minced garlic and ½ teaspoon lemon juice into each piece of chicken and let marinate up to 24 hours. Grill on indoor George Foreman style grill. Using a rice cooker with a steamer basket will make cooking the rice and broccoli a snap!

Dessert: Make something especially sweet and chocolately!A batch of chocolate brownies dipped in semi-sweet or milk chocolate makes a deliciously rich treat that is very simple to make.

Simply pick up a brownie mix at the grocery store and bake as directed. Once they are cooled and cut, place them in the freezer for an hour or even overnight. When you're ready to dip them, simply melt a bag of semi-sweet or milk chocolate chips in a small sauce pan over low heat. Once the chocolate is melted, dip each brownie lengthwise ¾ into the melted chocolate. Remove promptly and let the excess chocolate drip back into the pan. Then set each dipped brownie on a wax paper lined tray. Once you've dipped all the brownies, set the tray in the freezer for 30 minutes or until the chocolate has set. Remove promptly from the freezer.

After dinner, enjoy a great chick flick or two!
