Caramel Halloween Popcorn Balls
Ingredients:
16 cups of plain popped popcorn (make sure that you do not buy the buttered flavor kind)
1 package (14 ounces) of unwrapped caramels
ΒΌ cup of butter
A pinch of salt
1 2/3 cups of shredded coconut
1 package (12 ounces) of semisweet chocolate chips
10 to 12 lollipop sticks or wooden craft sticks (colored sticks look best if choosing wooden craft sticks)
Halloween sprinkles and cakes decorations such as candy bats or candy corn
Directions:
Place the popped popcorn in a large bowl.
Place the caramels and butter in a medium saucepan and cook over low heat.
Cook and stir until the caramels and butter are melted and smooth. (This will be for about 5 minutes)
Stir in the salt and the coconut.
Remove the caramel mixture from the heat source and pour it over the popcorn.
With a large wooden spoon, mix the popcorn and the caramel mixture until the popcorn is evenly coated.
Let the popcorn cool slightly.
Place the chocolate chips in a bowl. Microwave at high for one minute. Check every 30 seconds until the chips are melted. Stir at each 30 second interval. The chips should be smooth.
When the popcorn mixture is cool enough to touch, grease your hands with butter and shape the popcorn into balls about he size of a baseball. Place a lollipop stick into each ball. Dip each ball into the melted chocolate and roll in the Halloween sprinkles and decorations. Your will probably have to place the candy corn and candy decorations after the ball has been rolled in sprinkles. The ball should only be decorated half way up. The top half of the ball will show only popcorn.
Set balls on wax paper and allow the chocolate to set.
If desired place a Halloween decoration such as small plastic skeletons on the lollipop stick. The stick will point up. If you prefer you can also use colored wooden craft sticks instead of lollipop sticks.
