Recipe: Tuaca Pineapple Cake

Rum cake is an annual tradition for many, but other adult beverages are worthy of moving beyond the bar. Tuaca is a perfect example. This sweet amber colored brandy has a smooth finish with a hint of citrus and vanilla, making it an excellent dessert ingredient.

Taking a cue from the popular drink that combines Tuaca and pineapple juice, this easy cake recipe begins with a pineapple cake mix. Prepare a quick and easy sheet cake for a crowd or use decorative pans to create elegant mini desserts.

Easy Tuaca Pineapple Cake Recipe
Yield: Approximately 12 servings
Ingredients
pineapple cake mix
water
cooking oil
eggs
Tuaca Glaze
Optional Garnish:
canned or fresh pineapple

Prepare the cake mix as directed on the package. Grease and flour a 13 x 9-inch baking pan and bake the cake according to the package directions.

After removing the cake from the oven, prepare Tuaca glaze. Use a skewer to poke holes every inch or so in the top of the warm cake. Evenly drizzle half of the glaze over the cake. Let it soak in briefly and repeat with remaining glaze.

Allow the cake to cool completely. Cut into squares and garnish with chopped pineapple.

Tuaca Glaze Recipe
Ingredients
6 tablespoons butter
3 tablespoons water
3/4 cup sugar
4 to 6 tablespoons Tuaca

Melt butter in a saucepan. Stir in water and sugar. Bring to a boil. Remove pan from heat and carefully stir in Tuaca. Stand back to avoid rising steam and splatters. Use immediately.

Be careful not to poke too many holes in the cake.

Bake the cakes in mini bundt pans for a nicer presentation.
