If your looking for something different this Thanksgiving try a Turducken. You may be wondering what in the world that is. A Turducken is a Cajun creation that combines a turkey, a duck, and a chicken in one bird. It's not some weird science experiment, but a deboned duck stuffed with cornbread and/or sausage stuffings. The duck is then placed inside a deboned chicken then put into a partially deboned turkey.

I had tried one several years ago in Texas, where it was a little less common. In Louisiana it is pretty common though and has been around quite a while. Though the origins are disputed, Chef Paul Prudhomme brought the dish national attention. There are quite a few variations in the dressings depending on which bayou it came from. Cornbread stuffing is probably most popular, with sausage and seafood being popular ingredients as well.

I have tried several of the variants and have not found one I didn't like. The dish can be made from scratch or ordered from many small markets in Louisiana and shipped anywhere. Tony Chachere's which is a nationally recognized even offers one online now. So if you want to pop a surprise on turkey day a Turducken could give your guests something to talk about for a while.
