Turkey Pasta Salad

Ingredients:
-1 pound of penne pasta, or other shape you like
-1 pound of turkey, cooked and cut into 1/2 inch chunks
-1 cup of seedless red grapes, washed and halved
-3/4 cup of celery, washed and cut into thin slices
-1/2 cup of chopped red onion
-3/4 cup of mayonnaise
-3/4 cup of plain yogurt
-1 tablespoon of tarragon, torn into small pieces
(or 1 tsp. of dried tarragon)
-1&1/2 tablespoon of lemon juice
-salt and pepper to taste

Directions:
In a 3 quart sauce pan, bring water to boil to cook the pasta. When water boils, add the pasta and cook, stirring often and checking for doneness. Cook until the pasta is al-dente or just about cooked through, then drain in a colander and rinse with very cold water until chilled. Set aside (in the refrigerator, if space allows).

While the pasta is cooking, cut up the vegetables, grapes and turkey, then place in a large mixing bowl. In a smaller bowl, mix the mayonnaise, yogurt, tarragon and lemon juice. Then, add the pasta to the turkey mixture, pour on the mayonnaise mixture and stir to combine. Add the salt and pepper to your liking.

Refrigerate until serving. Enjoy!
