Looking for something new to stuff that turkey? These go great for that holiday turkey. These are ready to go into a bird if you cook them in the turkey. If not, they can be made in advance and reheated in oven when ready to eat

Chestnut Stuffing

1 cup celery, diced

1 large onion, diced

1 ½ sticks butter

1 cup chestnuts, peeled, drained and chopped

1 teaspoon salt

1/8 teaspoon pepper

1 teaspoon poultry seasoning

8 cups bread crumbs

2 eggs

3 tablespoons milk

Sauté celery and onion in butter until soft. Stir in chestnuts, poultry seasoning, salt, pepper.

Put bread crumbs in another bowl and pour chestnut mixture in it. Beat in eggs and mix well. Cook in oven for 30 minutes or put in bird.

Beefy Onion Stuffing

1 lbs ground beef

1/8 cup allspice

Salt and pepper to taste

1/8 teaspoon nutmeg

2 sticks butter

1 onion, chopped

1 cup celery, diced

2 cups water

2 packages ready mix stuffing

Mix ground beef, salt, pepper, allspice, in saucepan and sauté. Brown meat and remove from pan. Put butter, celery and onions in the saucepan and cook for 15 minutes on low. Stir in water and boil.
Pour mixture over stuffing mix, add beef and toss thoroughly.

Fruit and Nut stuffing

4 cups nuts (walnuts or chestnuts)

1 stick unsweetened butter

¼ cup celery, diced

1 small onion, diced

½ cup cream

½ cup dry cooking sherry

2 cups breadcrumbs

¼ cup raisins

¼ cup dried apricots

1 teaspoon salt

1 teaspoon pepper

If using chestnuts simmer for 5 to 10 minutes until tender and set aside.

Sauté butter, celery and onions until tender. Add chestnuts or walnuts. Cook 1-2 minutes. Add remaining ingredients and cook well for 5 minutes.
