Buy 3 bottles of inexpensive balsamic vinegar for every 1 bottle of finished product
Tip : Don't buy the cheapest vinegar. I suggest at least something imported.
Optional :
Sugar
Fresh herbs of your choice ( Basil, Thyme, fennel, dill, whatever you like. Experiment ! )
Garlic gloves pealed and whole
Directions :
In a medium sized pot pour all vinegar and heat on high uncovered
At this point add optional herbs and / or whole garlic cloves
If you want to make a dessert vinegar add approx 2 large tablespoons of sugar to taste
Bring entire mixture to a full rolling boil for at least one minute to infuse herbs
Remove Herbs and garlic cloves
Now turn heat down only slightly to a medium high
You want to keep mixture right under a boil but reducing in volume steadily
Once mixture has reduced to 1/4 to a 1/3 of original volume remove and taste
Reduce vinegar to desired thickness and place back in bottle. Your looking for a syrup like vinegar.
If sugar was added leave mixture in fridge until ready to use
Serve at room temperature
