Two Easy and Delicious Salad Recipes for Your Post Holiday Diet

If you are anything like me the holidays have left you feeling overfed and ready to jump start your diet. Let's face it January is the month most of us begin dieting. Here are two of my favorite easy to make salads. Both are low calorie and absolutely delicious. Enjoy!

Easy California Chicken Salad with Grapes and Almonds

Ingredients:
1 Rotisserie chicken (skinned)
1 cup Breakstone fat free sour cream
1 cup seedless red grapes
1/2 cup blanched almonds
1 T low fat mayonnaise

Directions:
Remove all skin from rotisserie chicken and cut it into small pieces. Halve the grapes and add along with the blanched almonds, sour cream and mayonnaise. Mix all ingredients together and enjoy. A one cup serving has approximately 300 calories. Serve with a slice of wheat bread. This salad makes a great lunch or light supper.

Belgian Endive and Avocado Salad

Ingredients:
2 to 3 whole Belgian endives
1 avocado
1 cup cubed Havarti cheese
1 peeled granny smith apple
1/2 cup dried cranberries

Directions:
Wash and chop the endive. Peel and cube the avocado and the apple. Mix all of the ingredients together in a bowl. Serve with your favorite low fat vinaigrette dressing.
