Two Easy Meal Recipes for College Students

Lori Leidig
When going off to college, the thought of cooking for yourself is often daunting. It doesn't have to be. Some of the best stuff is really simple to make and tastes damned good. These two recipes have the added benefit of being pretty cheap to make.

I doubt that these are original, but I have been eating them since I was a wee child (I'm 50 now) so I have no clue as to the origin. My mother just always made them when pressed for time or money, and I continued the tradition.

Cheesy Tuna Casserole
Box of mac & cheese
regular size can of tuna
standard size can of Cream of Mushroom soup

Make Mac & Cheese as per box directions.
Mix in the soup and the tuna.

How easy was that? YUM! Now, personally, I put mine into a casserole dish after that and heat it on 350 for about 20 minutes to get the flavors mixed a little more, but that step is no way necessary.

Poor Man's Stroganoff
Bag of wide egg noodles
Pound of hamburger
chopped onion
mushrooms
Lg can Cream of Mushroom soup
TBSP (or two) of sour cream
salt and pepper to taste

Put noodles on to boil as per package directions.

Brown hamburger with onion and mushrooms (fresh or canned, whatever you prefer.. amount is up to you, this aint rocket science!)
Add soup til heated, toss in a spoon or three of sour cream to taste. Serve over noodles.

Actually, you can substitute rice for the noodles too.. I like it just as well either way, depending on my mood. heh.

Also, while my brother drains his hamburger before adding the soup, I do not. I think it adds flavor.

Out version of what a relative called "Sh*t on a Shingle" was Hamburger gravy on toast. Good recipes for any one who is single or people like me who occasionally have to fix meals for one.

My Dad would make something similar to the tuna dish, that he called "Sh*t on a Shingle, " back in the WW2 days -- tuna mixed with cream of mushroom soup, heated, and on top of a piece of toast.

Good 'ole Campbell's creamy soups! Don't forget the simple and classic pbj sandwich, no cooking or fridge needed, still a lazy fave of mine at 50. :)
