Two More Delicious, Healthy and Easy-to Make Grilled Chicken Recipes!!!

Here are some more delicious and healthy grilled chicken dishes.

1. Grilled chicken with mustard

Ingredients:

1/2 cup Mayonnaise
2 Tbsp. Mustard
1 Tbsp. honey
1 Tsp. apple cider vinegar
2 green onions, chopped
1-1/4 lbs. boneless, skinless chicken breasts

Method of preparation:

1. Mix mayonnaise, mustard, honey, vinegar and onions.

2. Keep 1/3 cup of the mixture aside.

3. Grill chicken breasts brushing with remaining mixture until done.

4. Serve with reserved mixture.

2.Marinated grilled chicken

Ingredients:

2/3 cup soy sauce
1/4 cup rice wine
1/4 cup rice vinegar
1/4 cup sugar
1 tablespoon freshly grated ginger
2/3 cup beer
6 skinless, boneless chicken breasts, cut into 2-inch pieces
2 large red bell peppers, cut into 1-inch cubes
2 large capsicum, cut into 1-inch cubes
2 tomatoes, cut into 1-inch cube

Method of preparation:

1. For the marinade, combine the soy sauce, wine, vinegar, sugar, ginger and beer in a small saucepan. Cook over high heat until the mixture reduces by half. Let cool.

2. Toss the chicken with half of the marinade in a small bowl. Cover and refrigerate for 30 minutes or overnight.

3. Preheat the grill to medium-high.

4. Thread the chicken and vegetables on the skewers and brush them with some of the remaining marinade.

5. Grill the skewers on each side until the chicken is cooked through, about 4 to 6 minutes per side.
