While the system is a noble effort at recreating one of the most complex martial arts on the planet, if not the most complicated, Brazilian jiu-jitsu, it still is a bit uneven in spots.
Even people who practice in jiu-jitsu might find things a little different than what they expect on the ground in UFC Undisputed 2009.
UFC Undisputed 2009: Submission Tips
The most surefire way to get a submission in UFC Undisputed 2009 is to wear your opponent out before slapping on an armbar or a triangle for example to get the tap out.
This means to wear down their stamina, not their health.
In order to get opponents to exhaust their stamina to leave them ripe for a submission victory, try to get them to expend their energy. One way to do this is to bait them by getting them in your guard (with your legs wrapped around them on your back) and wait for them to come to you. Let them struggle to try and punch you or fight for position. You want to conserve your own energy while letting them expend theirs as much as possible and staying out of danger.
The transition game is also very important. Learn how to react in every situation to get the best position for a submission. This is also a great time to burn the opponent's stamina. When they go for a transition of their own to a better position, use their own momentum against them by reversing the attempt, which will drain their stamina considerably.
You can also block attacks and transition attempts as well.
Finally, an opponent in the grey zone who is badly damaged by a massive blow will be vulnerable to a submission as well so stay aggressive and try for one if you're unable to pound your opponent out.
Also be aware that the gap between submission offense and defense is also very important when matching up fighters. If you're trying to submit Frank Mir with Brock Lesnar it probably won't happen in UFC Undisputed 2009 unless you happen to be an expert playing on the lowest difficulty level.
Be sure to tap the face buttons as quickly as possible when the time comes to finish your opponent off with a submission as well.

ok this might sounds stupid but when u get someone into the knee bar , how do u get them to tap ? like what do u press because when i get him into it my guy just stands there and holds his leg

that guy was an absolute looser (really, it was kinda sad) and it even took me 20 attempts or something even though he was dizzy through stomach hits in 1st round
The ground game can be frustrating on the game for sure especially on the higher levels.
good tips i just realized that myself. the submission game is very tricky but these are mostly the basics here
UFC 2009 is my favorite game. I play it online, when I first started playing I used the face buttons to get out and lock submissions. After getting submitted a couple times I started using the joystick. The joystick is so much better, not only can you lock up submissions better but you also get great position when you transision out. You have to be careful though, its not how fast you spin the joystick but having it in a continuous circular motion without breaking the circle. I would recommend using the joystick instead of face buttons. For those who dont know ow to turn on the stamina bar, you go into options on the main menu. It will say stamina bar on/off, turn it on its a huge help in winning fights.
