In Felucca stealth is paired with the ninjitsu skill because the ninja forms like llama allow pvpers to sneak while hidden at the same speed as a mounted player. Moving quickly and surprise are used to get the upper hand at champion spawns and sneak up on victims.
Special moves in combat like backstab and surprise attack are also available to ninjas. If a PVP situation goes badly, a ninja can use a smoke bomb to return to stealth and teleport away using the Shadow Jump spell.
Stealth is also effective for moving past monsters in dungeons to steal an artifact or pick a locked chest. Stealth is also a way to spy on rivals, a role-play tool and good for avoiding people you don't like. Training stealth is no longer the grind that it once and it can be easily trained from 0 to 120 by any player in under three days of training.
To train the stealth skill quickly in UO you should have access to a customizable house with a pair of teleporters, a set of regular clothing, full studded leather armor, a set of ringmail armor and a close helm. Before you begin training stealth, you should also have the hiding skill. Once you are hiding you will automatically attempt stealth the next time you move.
The house you are using for training stealth should have two teleporters lined up in a straight line with some space in between. Use a macro, speed pad or programmable mouse to move your character slowly from one tile to the next one step at a time while you are hiding every 20 seconds. As you gain in stealth skill you will put on heavier armor to increase the difficulty so that you will continue to gain skill at a fast rate.

0 - 30 Buy stealth and hiding skill from the NPC trainer in Haven at the thief guild
30 - 65 Wear clothes
65 - 95 Wear studded leather
95 - 100 Add ringmail or Close Helm to the studded leatherList of Artifacts for a Stealth Template:
Shadow Dancer Leggings +20 Stealth Bonus
Cloak of Silence +10 Stealth Bonus
Burglar's Bandana +10 Stealth Bonus
Mark of Travesty +10 Stealth Bonus
Dryad Bow +10 Stealth Bonus
