Ingredients:
1 C. butter (softened)
2 eggs
1 C. brown sugar
1 C. sugar
1 ½ tsp vanilla
2 C. flour
2 C. oatmeal
1 tsp baking soda
1 tsp baking powder
½ tsp salt
Chocolate chips
1 ½ C. milk chocolate grated (Cadbury or Galaxy works best)
Step 1
Blend oatmeal into a fine powder and set aside.
Step 2
Combine flour, baking soda, salt, and baking powder and mix well. Set aside.
Step 3
In a large bowl, cream together butter and vanilla. Add brown sugar and sugar and mix well. Stir in eggs and add in flour mixture. Add oatmeal and grated chocolate. Mixture will be hard to stir.
Step 4
Preheat oven to 375º Roll into 1 inch balls and place on a cookie sheet. Slightly press cookie ball into an oval and bake for 10-12 minutes
Yields about 4 dozen cookies.
Substitutions: If using Splenda, add it after the brown sugar has been added and has been mixed well.
Suggestions: Feel free to add your favorite diced nut into the dough before baking.
