Hot Black Chili

16 oz can of black beans

16 oz can of red or kidney beans

28 oz of unsalted, diced tomatoes

28 oz of tomato sauce

1 med green pepper, diced small

1 med red pepper, diced small

3 jalapenos

1 large sweet onion

One pound of ground meat (beef, turkey, chicken) - optional

Two tsp of the following -

• Raw or light brown sugar

• Cumin

• Ground cayenne or chipotle pepper

• Cajun or blackening season

• Chili powder

• Black pepper

• Garlic salt or powder

½ cup of vegetable or canola oil

If using ground turkey, pour about half of your oil in heated skillet and cook one side of turkey before adding Cajun (or blackening) season. If you like, half of your seasonings can be added to shortly before it is thoroughly cooked.

Afterwards, place cooked meat in the same pot in which the chili will be cooked but do not turn off the heat for skillet. Add your peppers and onions and reduce heat to low as you want to cook slightly but not scorch.

In the mean time, pour on top of ground meat tomato sauce, canned tomatoes and beans (keep the juice in the black beans. Turn heat to low. By this time, pepper and onion mixture should be slightly cooked and added to chili pot. Mix thoroughly and keep on low heat for no more than 20 minutes. Let stand for at least an hour before serving.

This is good for people who like to eat cute looking food but rarely get full. Good for dates since it has no beans.

Sexy Steak Chili

16 oz (or one pound) lean sirloin steak, broiled medium and cut into strips

One large sweet onion, vertical sliced in 1/8th

One large green bell pepper, sliced lengthwise

One red bell pepper, sliced lengthwise

6 Sundried tomatoes, chopped fine

Two large jalapenos (optional)]

One 15 oz can of tomato sauce

Two tablespoons of the following

* Light brown sugar

* Garlic salt

* Fresh ground black pepper or cracked peppercorns

* Cumin

* Chili powder

* Olive oil

In one skillet, heat oil on medium. Add peppers and after its slightly cooked, add onions, tomatoes and sauce. After cooking for five minutes, add seasonings and spices. Stir on low heat and add strips. Mix in 1/4 cup of water,cover and let stand for 30 minutes. Serve with rice or pasta.
