I love to cook using my crock pot. Nothing beats putting everything in a pot and having it ready and delicious upon dinner time arising. Here are a few unusual recipes using your crock pot I have found.

Bacon & Apple Crock Pot Chicken

2 lbs chicken pieces

2 tablespoon butter

4 oz bacon, diced

2 leeks, diced

½ cup apple juice

½ cup chicken broth

2 tablespoon honey

2 teaspoon fresh thyme

8 oz apples skinned and chopped into pieces

2 tablespoon corn starch

Salt and pepper to taste

Put each in crock pot and mix well. Cook on low about 8-10 hours. Serves four people.

Beef in Peanut sauce

2 lbs beet stew meat

2 tablespoons vegetable oil

2 onions chopped

2 garlic, crushed well

1 teaspoon paprika

2 cups beef stock

8 oz turnip cut in chunks

2 tablespoon tamarind sauce

2 teaspoon light brown sugar

2 tablespoon smooth peanut butter

1 teaspoon wine vinegar

Salt and pepper to taste

Add to pot and mix well. Cook slow 8-10 hours. Serves four people.

Italian Sausage Stew

1 cup navy beans

2 teaspoon olive oil

1 lbs fresh Italian sausage

1 onion, diced

2 sticks of celery, diced

1 cup dry red or white wine

1 teaspoon Italian seasoning

7 oz can chopped tomatoes

¼ head of cabbage, shredded

Salt and pepper to taste

Italian Bread

Cook all ingredients except Italian Bread on slow for 6-8 hours. Serves four with the bread.

Tomato Garlic Lamb

2 lbs of lamb cut in 1" pieces

2 tablespoons flour

4 tablespoons olive oil

2 garlic cloves, minced

1 sprig rosemary

2/3 cup dry white wine

2/3 cup beef broth

1 lbs of tomatoes, peeled and chopped

Salt and pepper to taste

Mix well and cook 8-10 hours on slow. Serves four people.

Spicy Tomato Sauced Fish

1 tablespoon olive oil

1 onion, diced

2/3 cup strained tomatoes

1/3 cup vegetable broth

2 garlic cloves, crushed

1 small red chili pepper, diced well

1 teaspoon ground cinnamon

Pinch of ground turmeric

1 teaspoon lemon juice

2 lbs white fish fillets

2 teaspoons chopped coriander

2 teaspoons chopped parsley

1 red pepper, chopped

½ cup parmesan cheese

Salt and pepper to taste

Mix well and cook 6-8 hours on slow. It has a bit of a bite. Serves four.
