Apples and Pears are the featured ingredients for this class on October 9th at 6:30pm. The planned menu showcases these fall fruits in savory dishes such as apple cheddar fondue and pear nut roulade with red wine syrup.
On Wednesday, October 10thChef Jason Houser from Muse Restaurant and Wine Bar will pair Mediterranean style dishes with wines in a wine and food pairing class. He will teach pairing techniques for enjoying food and wine at home or your own parties.
On Friday October 12th there will be a Lowcountry Oyster Roast. You can guess what the main menu item will be, and along with oysters and two special sauces there will be a few other foods plus a decadent sounding dessert of chocolate bourbon squares.
The Ode to Pork will be on Tuesday October 16th at 6:30pm. Everyone knows that Southerners love their piggies, and this class will teach you how to cook with pork in several of its forms. A couple of planned items on the menu are Ham hock and okra stew, poached egg salad with crispy pancetta, and butternut squash and bacon ice cream!
Chef Rick Boyer from the Dining Room at Biltmore Estates will be at Charleston Cooks! on Thursday October 18th at 6:30pm. He will demonstrate and serve dishes from the Biltmore's latest cookbook.
Vendor Day is on Saturday October 20th from 11am until 4 pm. There will be cooking demonstrations, prize drawings, kitchen advice, and hands on experience with some of the best kitchen equipment from vendors such as Emile Henry, Viking, Nordicware and more.
The Wine 101 series continues with wines of the Bordeaux region of France on Saturday, October 20th at 6:30pm. They will be paired with light appetizers.
The Kitchen Fundamentals 2: Sauces 1 class begins on Monday October 22nd at 6:30 pm. The second class in the sauce series is scheduled for Monday October 29th at 6:30 pm.
Sous Vide cooking is featured on Wednesday October 24th at 6:30 pm. This cooking technique cooks food in vacuum packed bags in hot water as a way to preserve color, nutrients and flavors.
Cooking Around the World: Fall in the French Countryside is taught on Tuesday October 30th at 6:30 pm. Some of the planned dishes to be taught are country pate, mussels in garlic cream broth, Coq au Vin, and more.
