My husband has always liked these cookies, but when I made them a couple of weeks ago he raved about how good they were, saying they were the best I had ever made. The only difference I could think of in how I had made them was that I had used real butter instead of margarine. I don't remember why I used the real butter, but it was probably because I realized that almost anything is better made with real butter, and since these cookies are not intended to be a health food anyway, they'd just as well be as good tasting as I could make them.
I have a batch of them in the oven right now, and since my husband brought home a jar of raspberry preserves recently, I plan to put the raspberry in some of them this time, along with some made with the usual apricot. He loves raspberry, so hopefully will be pleasantly surprised when he gets home from running an errand.
You might want to experiment with other flavors, such as strawberry. I also wonder how they might taste with a chocolate filling. Must try that.
You could fill some with apricot preserves, for gold, some with raspberry or strawberry for red, and perhaps you could think of something both good and green to carry out the Christmas colors. Green food color could be mixed into apricot preserves for that purpose.
