If you scramble an egg and it ends up on the floor, it's called a mess. In this part of the country, another egg mess ends up on your plate! It is delicious and makes a meal. The best part of an egg mess is the ability to use leftovers.
The Veggie Egg Mess
My favorite veggie egg mess uses spinach. Cut up onion, saute it, chop the spinach and add it to the skillet. Next, scramble eggs and pour on top! Let it cook thoroughly. Add cheese on top and it is ready to eat. Try using up onions, peppers, leftover vegetables like spinach. Add fried potatoes or hashbrowns to this too! There's no need to waste leftover food.
The Meat Egg Mess
Make sure whatever meat is used has been cooked. Some of the leftover meat choices you can use are hamburger, pork chops, bacon, sausage, minute steak, steak, hot dogs, roast beef, brats or meat loaf. I chop, slice or crumble all of these meats before adding to the egg mess.
The Meatloaf Mess
Put oil in skillet and add hash browns, peppers and onions, cook throughly. When the hash browns start to brown, crumble the meatloaf into the skillet. Scramble the eggs next. Just pour the eggs on top of everything that's already in the skillet. Set a lid on this and cook until the eggs are thoroughly done, stirring a few times. Add cheddar cheese or American cheese, and serve with biscuits or toast.
Egg messes became popular in truck stops around here several years ago. Why choose a mess? Eating a mess is like eating a meal. If you eat one for breakfast, you may not be hungry until supper. They use up ingredients that would probably go to waste in the refrigerator. You can make a mess that suits just about anyone. It's a terrific way to get kids (and adults for that matter) to taste foods that they may not be acquainted with, like spinach. The spinach flavor doesn't come through as strong as when you eat it by itself.
Come on, what's in the refrigerator right now that needs to be used up? Any leftover roast beef or meatloaf? Use your imagination and make an egg mess, the kind you eat!

Fantastic ideas here - I know over the years I have gotten very bad about over cooking and throwing away the left overs. No more I am starting to cook smaller portions, use smaller plates and use the left overs the next day for another meal. Thanks for some fantastic tips.

I've never had spinach with egg-I'll have to give it a try.
I usually call these Kitchen Sink Frittatas, just to make my using whatever leftovers I round up out of the fridge sound a little more elegant. In most cases, the family likes my concoctions, even when (as usual) I get a little carried away with the habanero and other hot pepper "flavor enhancement"...
