Wick Fowler's 2-Alarm Chili Kit offers just the right variety of seasonings to make delicious chili every time. The packet comes with enough spices to liven up two pounds of ground meat. The ingredients include a large packet of chili powder, crushed red pepper, paprika, salt, a garlic and onion combo, another combo packet of oregano and cumin and also some masa flour for thickening. One thing you must realize is that chili is not exactly a low calorie meal, unless you use ground turkey which would help cut some of those, as this flavoring packet contains about six 3 tablespoon servings at 60 calories each. Since I only cook about a pound of meat, I only use about half of each ingredient and save the other half for next time. Each serving also contains 10 grams of carbs and 1.5 grams of fat. I have always found this product at the grocery store where you would find the Mexican foods with the taco sauce.
Here's how I make my favorite chili, which of course, has no beans, but feel free to add them if that's what you like. Since I am usually, these days, cooking for only two, though even when cooking for three, I only use a pound or so of ground sirloin. If you prefer ground round or chuck then those work just as well. I guess I'm just a little spoiled, though it would probably taste even better with a little more fat content. There have been a few occasions where I've used ground turkey, which is quite tasty, but I just love red meat I must admit. To me there is just no compromising on that, even though I have tried. Anyways, I brown approximately one pound of ground sirloin in a sauce pot and once it is browned well, drain the liquid and add one 8 oz. can of tomato sauce (my favorite is Hunt's) and then for the extra kick I like, I just recently started to add a can of Ro*tel diced tomatoes and green chili to get chunks of tomato and extra spiciness from the chili's. If you do not like your chili very hot, I would suggest just using a can of petite diced tomatoes. I let the sauce cook for a little while to get the flavor of the tomatoes and meat to meld then pull out my trusty packet of Wick Fowler's 2-Alarm Chili kit. I recommend and use this packet, however, also available is a False Alarm Mild Chili Kit for those of you with slightly weaker taste buds. If you can't find the False Alarm Mild Chili Kit, one thing you can do is get the 2-Alarm Chili Kit and either use less or completely eliminate the red pepper.
After mixing all the ingredients together, minus the masa flour, let this simmer on the stove for a while. I usually simmer my chili on low heat for an hour and then see what the consistency is like. I prefer a thicker chili and will mix a little of the masa flour with a small amount of water to make a slightly thick paste to add to the chili a little at a time. You don't want to add the whole packet as you will probably end up with a big thick mess. If you add it slowly you'll be sure to get the perfect consistency. If you prefer beans in your chili, then make sure to add those and let simmer for a while to get all the flavors to mix. The best way to serve this chili is adding sharp cheddar cheese and raw chopped onion and serve with a slice of warm garlic bread or at the very least some crackers to tame the bite of the spice.
