These cupcakes are great for young kids because you don't have to worry about peeling off the paper lining, the whole thing is edible.
Ingredients:
Box of cake mix (I prefer the party mix with all the color specks)
All ingredients required for cake mix
24 ice cream cones (with flat bottom)
White and red icing
Heart themed decorations (sugar pieces, sprinkles, etc.)
First you will need to preheat the oven to 350 degrees. Place the flat bottomed ice cream cones into a muffin tin. This will help them stay in place but if you don't have a muffin tin, you can balance the ice cream cones on a regular cookie sheet but be very careful when moving them.
Prepare the cake mix as directed on box, if there are different directions for cakes and cupcakes, follow the cupcake recipe. Fill each ice cream cone about ¾ of the way with the prepared cake mix. Bake the cupcakes for 20 minutes. The cup cakes will rise in the cone and end up looking like a scoop of ice cream. Remove the cones from the pan and cool on a wire cooling rack. Again this is sometimes tricky to get them to balance but there usually isn't a problem. This recipe makes about 20-24 cup cake cones.
After the cupcake cones have completely cooled, it is time to decorate them. Since we are making Valentine's Day cupcakes, I use red and white frosting and then decorate them with heart themed decorations. Sometimes I use red and white sprinkles, or heart shaped sugar pieces, whatever you want to use. If you're creative you can make your own decorations but if you're short on time you can usually find these things at your local grocery store.
This recipe can be adapted for many holidays, just decorate them with different themed pieces or different colors. When I had to transport these to school my mom would take a cardboard box and cut it down to about half the height so it was just an inch or so taller than the cupcake cones. Line all the cupcakes up and try to fit them together so there aren't any large gaps which would allow them to fall over. Cover with plastic wrap and you're all set. Since it was just a cardboard box you don't have to worry about bringing it back home.
