Valentine's Day Pie Pops

The Lollipops with a Pastry Kick

Sam Sunchoke
Bite sized heart shaped pies at the end of a lollipop, perfect for Valentine's Day.

Ingredients/Supplies Necessary
• 1 Frozen Pillsbury Pie Crust
• 1 Egg
• 1 Bag of Lollipop Sticks (Purchased online or from a crafts store)
• 1 Large Heart Shaped Cookie Cutter
• 1 cup sugar
• 6 cups fruit of your choice
• Flour

Prepping:

• Preheat oven to 375 degrees Fahrenheit

Step 1: Preparing the Pie Crust

You are welcome to make your own pie crusts out of scratch, but since I am a busy person who is short on time and money, I choose to buy a pre-frozen pie crust from the local grocery store. A package runs about $3.99 and comes with 4 individual pie crusts. Thaw the crusts for a few hours then unroll them on a flat surface. Spread some flour on both sides of the pie crust to be able to work with them easily.

Step 2: Cutting the Pie Crust

Using your heart shaped cookie cutter, cut individual pieces of the dough. You should attribute two pieces to every pop you intend to make. Once you have these pieces, gather the leftover dough and flatten it to create as many heart-shaped pieces as you can.

Step 3: Fixing The Lollipop Stick

As stated above, you can buy a bag of lollipop sticks online or from a craft store. You can buy 50 on Amazon.com for $1.88 whereas a craft store would cost you about $5.99 for 50. Take one lollipop stick and press one flat onto the heart shaped dough. The end of the stick should be approximately at the center of the heart.

Step 4: Adding the Fruit Filling

As was the same with the pie crust, you are welcome to create your own pie filling at home from scratch or purchase canned fruit filling from the grocery store. To create your own, chop 6 cups of your favorite fruit (apples, blueberries, cherries, etc) and mix it with 1 cup sugar. Take one spoon of this filling and place it in the center of the pie crust with the lollipop stick. It is important not to overfill the pie as it will leak out of the sides during baking and will ruin the aesthetics of the pie.

Step 5: Completing the Shape

Take the other heart-shaped cut out of the pie crust and place it over the pie filling and the other pie crust. Using an extra lollipop stick, press firmly into the edges of the shape to seal the two pieces of dough together and create a flute look. Now your creation should look like a pie pop!

Step 6: Golden Crust

Break a large egg and separate the egg white from the egg yolk. Dispose of the yolk. Brush the some egg white on each end of the pie so that it will create a golden flakey crust after cooking

Step 7: Baking

Bake your creations on a cookie sheet in the oven at 375 degrees Fahrenheit for about 12-15 minutes (or until golden brown).

Step 8: Enjoy!

Remove from the oven. Let cool. Enjoy right away or package it in plastic wrap and give it to your sweethearts on Valentine's Day!

Alternate Methods:

Instead of using fruit, feel free to use any other sort of pie filling (chocolate, pecans, etc).
