Cookies are a huge part of Christmas; even Santa eats them! They're easy to make in big batches so there's enough to give as gifts or to eat all of them yourself if you so choose. If you are interested in making vegan Christmas cookies this year, here are some of the best recipes I've located that can satisfy almost every cookie lover at Christmas.

"Gingerbread Pecan Biscotti"

A take on the classic Christmas gingerbread cookie, this biscotti is all vegan and perfect for a party, gift or to devour at breakfast. The ingredients, including cinnamon, ginger and nutmeg are sure to conjure up the feelings of the holiday. This recipe makes approximately 10-12 pieces.

"Chewy Vegan Chocolate Chocolate Chip Cookies"

Be careful when you click the link of the recipe as you may have to restrain yourself from trying to lick the screen. The total baking time is only about 35 minutes so they're easy and quick to make, especially when you need a spur-of-the-moment Christmas hostess gift. The recipe calls for many items you probably already have in your kitchen including vegan chocolate chips, vanilla, sugar and cocoa powder. It makes 18 cookies.

"Mint Chocolate Chip Cookies"

This recipe allows for a combination of chocolate and mint that is perfect for Christmas. It makes eight large cookies and takes only 40 minutes to make from start to finish. For those that don't want a completely chocolate cookie, these are made with rolled oats and vegan chocolate chips, so you get a taste of chocolate that's not too much but just enough to satisfy your craving.

"Simple Sugar Cookies"

What would Christmas be without a pile of sugar cookies? They are very quick to make as they bake in only seven minutes (not including prep time) and it makes about 18 cookies. To top off your sugar cookies, you may want to try the following recipe as well.

"Vegan Chocolate Frosting"

The prep time for this recipe is only ten minutes and includes using six simple ingredients - vegan margarine, powdered sugar, salt, vanilla, nondairy milk and cocoa powder. This is an excellent topper for your sugar cookies. The rest you can always just eat with a spoon. It is Christmas season, consider it a gift to yourself.

These vegan cookie recipes are easy and quick enough to make even during a busy Christmas season. Considering they're free from animal products, you can make a giant batch for vegans and non-vegans alike instead of having to bake two separate batches for those with dietary preferences. Make sure to make a separate batch (or three) for yourself!
