Vegan Coconut Cake

2010 is here and the new year is a great reason to go vegan, here's an interesting variation of vegan coconut cake recipe.

Ingredients

For the cake

eight ounce silken tofu

one pound plus five ounce sugar

two cups coconut milk ( try making fresh)

twelve ounce coconut flakes

one cup canola oil

one pound plus four ounce all purpose flour

One hand a half teaspoon baking soda

One and a half teaspoon baking powder

For the icing

One pound soy margarine

One pound sifted powdered sugar

One-fourth cup milk

Preheat the oven to 350 degree fahrenheit or 180 degree celsius. Put tofu, oil, sugar, coconut milk and coconut flakes in a food processor bowl and whisk till a fine paste is formed. Add the baking soda, baking powder and flour to the above mix and blend well in the food processor. Pour the batter into into a cake tin an and bake for about an hour. Allow to cool.

Mix all the ingredients for the icing into a smooth mixture. Apply on the cooled cake.
