Vegan Coconut Cake Recipe

A vegan coconut cake recipe. No dairy, eggs or other animal products.

Ingredients

1 1/2 cups of flour
1 cup of sugar
1/2 cup of shredded coconut
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of soy, almond, rice, hempseed or other non-dairy milk
1/3 cup vegetable or canola oil
1 teaspoon of coconut extract
1 teaspoon of distilled white vinegar
1 teaspoon of vanilla extract

Directions

1.) Preheat oven to 350 degrees (F).
2.) Add all dry ingredients to a mixing bowl and mix all items together.
3.) Add all liquid items to the dry mixture and mix all ingredients together.
4.) Spray a 8" x 8" cake pan with non-stick spray or rub canola or vegetable oil on cake pan in order to prevent the cake mixture from sticking to the pan.
5.) Pour mixture into the cake pan.
6.) Put cake pan in the oven. The cake must bake for 30 to 35 minutes.
7.) Remove cake from oven and let it sit for at least 5 to 10 minutes prior to serving.
