Then comes the day when you are just craving....something...not sure what...
So, how about this:
Fudge Brownies
3/4 c. unbleached flour
1/4 c. unsweetened cocoa powder
1/8 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/4 c. vegan chocolate chips
1/4 c. canola oil
1 small mashed banana
1/2 c. organic sugar
1/2 c. soy milk
1 tbs. flaxseed (ground or meal)
1 tsp. vanilla extract
Preheat oven to 350 degrees. Coat 9 inch square baking pan with canola oil cooking spray. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in bowl. Melt chocolate chips with canola oil in double boiler, stirring until smooth. Remove from heat and whisk the banana and sugar into the chocolate mixture. Combine the soy milk, flaxseed meal and vanilla in a measuring cup and fold into the melted chocolate chips. Stir the chocolate mixture into the flour mixture until just combined, then pour into prepared baking pan. Bake 20-25 minutes. Cool on wire rack, then cut into 16 squares.
Who needs butter, cream, eggs, and milk anyway?!
