Vegan Cravings

Fudge Brownies: YUM

Anyone like me and just forget all the foods that you left behind they day you decided to turn vegan? Seriously...I don't miss a lot of things like people believe you 'should'. I made it a point to eat healthier and just did it...no regrets!

Then comes the day when you are just craving....something...not sure what...

So, how about this:

Fudge Brownies

3/4 c. unbleached flour
1/4 c. unsweetened cocoa powder
1/8 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/4 c. vegan chocolate chips
1/4 c. canola oil
1 small mashed banana
1/2 c. organic sugar
1/2 c. soy milk
1 tbs. flaxseed (ground or meal)
1 tsp. vanilla extract

Preheat oven to 350 degrees. Coat 9 inch square baking pan with canola oil cooking spray. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in bowl. Melt chocolate chips with canola oil in double boiler, stirring until smooth. Remove from heat and whisk the banana and sugar into the chocolate mixture. Combine the soy milk, flaxseed meal and vanilla in a measuring cup and fold into the melted chocolate chips. Stir the chocolate mixture into the flour mixture until just combined, then pour into prepared baking pan. Bake 20-25 minutes. Cool on wire rack, then cut into 16 squares.

Who needs butter, cream, eggs, and milk anyway?!

    Sounds delicious! I will have to make these for my boyfriend who loves traditional brownies (including the eggs) so he can see how tempting vegan treats can be. Thanks!!
