Vegan Egg Nogs

Erin Thursby
Egg nog is one of the seasonal treats that might make a vegan feel deprived. But don't despair! There are egg nog replacements you can enjoy this holiday season. To get your drink on, make sure you find out if your liquor is vegan friendly. Captain Morgan's Run is said to be vegan friendly but you can find out for sure by googling Vegan Friendly Liquors. There are more out there than you might think!

Here are three vegan alt nogs for you to try:

Coconut Nog

5 cups coconut milk

1 1/2 Tablespoon Vanilla Mori-Nu Mates Low-Fat Pudding Mix

1/2 teaspoon nutmeg

Cinnamon

Vegan friendly rum or brandy

Whisk together coconut milk and pudding mix. You can whip it a bit for thickness. Add nutmeg. Let stand in fridge for at least a few hours. When serving add a shot (or two) of vegan friendly rum or brandy and a few sprinkles of cinnamon. (Serves 6)

Silk Nog Upgrade

5 cups Silk Nog

1 tablespoon birch sugar

2 tablespoons soy powder

1 tablespoon water

1/4 teaspoon nutmeg

Cinnamon

Liquor of your choice upon serving

Whip for thickness. When serving add a shot (or two) of vegan friendly rum or brandy and a few sprinkles of cinnamon. (Serves 6)

Banana Maple No-Egg Nog

This scaled down recipe is perfect for just one or two.

1 slightly overripe banana

1/4 teaspoon xanthan gum

1/4 cup of water

1 cup soy milk

3 tablespoons maple syrup

Nutmeg to taste

Cinnamon to taste

Liquor to taste

Mix the xanthan gum with about 1/4 cup of water. Let stand to thicken, Then whip like an egg white. While it's standing, mash your banana. Toss all the ingredients in the blender. Blend well and serve, with or without alcohol, cinnamon or nutmeg to taste. (Serves 1 or 2).

Maple syrup is vegan, despite rumors to the contrary. If you have problems with it, change this to another vegan friendly syrup sweetener.
