Vegan Green Bean Casserole

Green bean casseroles are always a big hit. Whether you are taking the green bean casserole to a pot luck dinner or serving it during a special holiday meal, the green bean casserole is usually one of the first things to go. The traditional green been casserole recipe calls for a can of cream of mushroom soup. Although that recipe for green bean casserole is very good, it is not vegan friendly. More and more people today are going vegetarian or vegan, so we need to adapt some of our old traditional recipes with vegan ingredients. With a little thought and creativity, it is easy to convert traditional recipes to vegan friendly recipes. Quite often the adapted recipe is even better than the original.

Although this recipe for green bean casserole is vegan friendly, it is sure to be a hit with every one. Besides this green bean casserole being vegan friendly, it is also inexpensive to make.

Vegan Green Bean Casserole

Preparation time: 15 minutes

Baking time: 20 minutes

3 (16 ounce) cans green beans (straight cut or French cut)

2 tablespoons vegetable margarine

3 tablespoons all purpose flour

1 ΒΌ cups plain soy milk

2 vegetable bullion cubes

1 small can Canned French Fried Onions (yes, these are vegan friendly)

Drain and pour the green beans into a 2 quart casserole dish. In a 1 quart saucepan, melt the margarine. Stir in the flour and cook briefly. Using a whisk, stir in the plain soy milk and the vegetable bullion cubes. Bring the mixture to a boil and reduce the heat to a simmer. Stir constantly until the mixtures thickens slightly and the vegetable cubes are completely dissolved. Remove from heat. Pour the sauce over the green beans and stir gently. Sprinkle the canned French Fried Onions over the top. Bake in a 350 degree oven for 20 minutes. Serve Immediately. This recipe for green bean casserole makes 10 one-half cup servings.

If you would like to adapt this recipe, you could easily add chopped onions or chopped mushrooms to the sauce.

This recipe for vegan green bean casserole can be made a day ahead of time. Just mix everything together, but do not bake. Cover and refrigerate the green bean casserole overnight. When ready to bake, bake at 350 degrees for 30 minutes. Extra time is necessary because the green bean casserole has been refrigerated.

    Thank you! I was looking for a recipe that didn't use cream of mushroom soup, as I can't get that at an affordable price here in Pakistan. I've got all these things in my kitchen though, so this is what's for dinner!
