Vegan Pumpkin Muffins

It's Halloween time and nothing smells more like fall than some delicious pumpkin muffins baking in the oven on a cold and blustery day. Check out this super easy recipe for deliciously spooky vegan pumpkin muffins:

Ingredients:1/4 cup of your favorite vegan butter sub
1 cup vegan brown sugar (if you don't have brown sugar, you can combine white sugar with 1 tblspn of molasses)
3/4 cup spiced applesauce
1 can of pureed pumpkin (about 2 cups)
Dash of nutmeg
Dash of cinnamon
3 cups of whole wheat flour
1 tblspn baking soda

*Makes about a dozen large muffins*

Instructions: Preheat the oven to 350 degrees. You will need a muffin tin. Grease the muffin tin. Add all ingredients to a large bowl and mix well so that there are no lumps or clumps. Pour batter into muffin tin and bake at 350 degrees for 25 minutes.
