Vegan Recipe: Maple-Peanut Butter Cups

Ingredients:

*5 c. bran flakes
*1 c. maple syrup
*1 c. white sugar
*1 1/2 c. crunchy peanut butter
*paper cupcake cups and a tray with sides, or a 9 in. pie pan

Directions:

Put the bran flakes into a large mixing bowl. Mix the syrup and the sugar in a small pot and gently bring to a boil, stirring often to dissolve the sugar. You need to watch this cook, to keep it from burning or boiling over. Once it begins to boil, remove from heat and add the peanut butter, mixing it all together thoroughly. Pour the sugar and peanut butter mixture over the bran flakes and mix to coat all of the flakes. Scoop the cereal/peanut butter mixture into the paper cups or the pie pan, then place in the refrigerator to chill for at least 4 hours, or overnight if possible. This should fill at least 8-10 paper cups.

Notes:
*This is a very sweet dessert. Small portions are best.
*Try turning some semi-sweet chocolate chips or carob chips into the mixture before dividing and cooling. Delicious!
