2 medium sized mashed, ripe bananas
2 oz firm tofu organic
1/2 cup organic soymilk
1/3 cup extra virgin first cold pressed olive oil
1 1/2 cups whole oats organic
1/2 cup whole wheat flour organic
1/4 cup unbleached flour
1/2 cup shelled walnuts
1 tsp baking soda
1 tsp aluminum free baking soda
1 tsp vanilla extract
2 tsp ground cinnamon
1 tsp ground ginger
1 cup fresh of frozen blueberries

Directions for Vegan Sugar Free Blueberry Banana Muffins

Beat wet ingredients
Beat together bananas, tofu, soymilk, olive oil, vanilla

Grind oats and nuts
Put oats in blender or food processor or grinder. Grind until oats turn into flour. Grind walnuts the same way.

Mix dry ingredients
Mix oats, flours, nuts, baking soda, powder, spices in large bowl

Combine wet and dry ingredients
Combine wet and dry ingredients thoroughly

Bake
Scoop into well oiled and floured 12 count muffin tins. bake in preheated 350 degree oven for about 25 minutes until golden on top.

    1 tsp aluminum free baking soda should say baking powder
