Vegan Treats for Mother's Day

Creating a menu or even a special treat for anyone can be difficult, but what if the person has special dietary requirements. such as being vegan? Don't panic here's a couple of quick vegan treat ideas that are sure to please mom as well as the non vegans in the family.

Vegan Peanut Butter Fudge
1 Cup Vegan Peanut Butter Chips Melted
8oz Vegan Cream Cheese
4 Cups Powdered Sugar
1 Tsp Vanilla

Blend Cream Cheese, powdered sugar and vanilla together. Add in melted peanut butter chips. Press into lined or lightly greased pan and cover with wax paper. Refrigerate until firm, slice into pieces and serve.

Vegan Cheesecake Fruit Cups

I package of Vegan Phyllo Baking Cups
I TBSP Margarine for Brushing
1 Cup of Assorted Fresh Fresh To your taste

Filling
8 oz Vegan Cream Cheese
8 oz Silken Tofu
1 Cup Confectioners sugar
1/4 Cup Soy Milk

Mix all ingredients thoroughly, either with a blender or a mixer. Arrange baking cups in single layer on lined baking sheet, brush lightly with margarine. Fill each cup about 3/4 of the way full with the filling mixture. Bake at 350 degrees until the shells are lightly browned and the filling begins to bubble, turn off oven and allow to sit in warm oven for about 5 minutes if filling is not set. Chill throughly, then garnish with fresh fruit, and a sprinkle of confectioner's sugar, if desired. Other garnishes you might try: mint, lemon zest, or chocolate shavings in addition to the fruit.

Aside from these recipes and ideas, here are a couple of tips for making your favorite desserts vegan. Whenever recipes call for egg, select vegan egg substitutes, soy milk works just as well as cow's milk in recipes also. Just by doing a little shopping around and making substitutions you can make almost anything and still keep it animal product free!
