Vegetables and Turkey Casserole

2 cups chopped up turkey
1/2 cup milk
3 large eggs (beat them)
1 small onion chopped fine (add more onion if you like it)
1 cup carrots (chopped)
1 1/2 cups celery (sliced fine)
1/2 cup green pepper (chopped) (optional)
1 1/2 cups potatoes (cubed)
1 can mushrooms (sliced) 4 oz.
1/2 tsp dried marjoram
1/4 tsp. ground sage
1/4 tsp. salt
1/4 tsp pepper
1/2 cup cheddar cheese (shredded)

Mix onion, carrots, celery and green pepper (optional) in a kettle, add water to cover your veggies, bring to a boil using medium heat. Cook until tender, approx 10 to 15 minutes, then drain. Take this mixture and pour it into a 11 x 7 baking dish. then in layers use the turkey and mushrooms.

Mix the milk and eggs well. Add the spices, then pour over veggies and meat. Top with the cheese. Bake for approximately 30 to 35 minutes at 325 degrees, until set. I like to let mine sit on the stove for 5 to 10 minutes before serving.

Serve with dinner rolls, a salad.

*You and also make this casserole with any meat that you prefer. I love to make it with hamburger or beef stew meat. You can also use beef roast, chicken, hamburger patties, cube steak cut up, veal, pork, etc.
