Vegetarian Boca Burger Salisbury Steak Recipe

The following vegetarian Salisbury steak recipe uses Boca Burgers, a meatless burger made from soy. Boca Burgers can be found in the freezer section of most major chain grocery stores and health food stores.

Vegetarian Boca Burger Salisbury Steak uses arrowroot, which can be substituted with cornstarch if preferred. Tamari is a dark brown sauce made from soy beans. It's similar to soy sauce, but has a thicker consistency and richer flavor. If substituting Tamari with soy sauce, you may need to adjust the amount of arrowroot used to obtain the thicker sauce.

When selecting Sesame oil, look for Chinese brands as they are manufactured from raw seeds and boast a heartier flavor. If using cold pressed Sesame oil, add an additional teaspoon to the following recipe.

Vegetarian Boca Burger Salisbury Steak pairs well with mashed potatoes, green beans, side salad and dinner rolls. Other side dish options include corn on the cob, roasted vegetables, baked potatoes and noodles.

VEGETARIAN BOCA BURGER SALISBURY STEAK
Serves 6
Prep Time: 20 minutes
Cook Time: 20 minutes

Ingredients:

2 Tablespoons Arrowroot or Cornstarch
1-1/2 cups Water
1/2 medium Onion, thinly sliced lengthwise
2 Green Onions, thinly sliced diagonally
1 clove Garlic, minced
1/4 cup Tamari or Soy Sauce
1 Tablespoon Chinese Sesame Oil
1/2 Yellow Pepper, thinly sliced lengthwise
1/2 Red Pepper, thinly sliced lengthwise
6 Boca Burgers

Directions:

1) Preheat oven to 375 degrees Fahrenheit.
2) In a small bowl, add Arrowroot to water and mix until smooth.
3) In a 2-quart saucepan, add onion, green onions, garlic, tamari, sesame oil and arrowroot mixture. Bring to a boil, stirring constantly.
4) Reduce heat to low and add yellow and red peppers. Cook for 5 minutes, or until peppers are tender-crisp.
5) Arrange frozen Boca Burgers in a single layer in shallow baking dish. Pour sauce over burgers. Cover with foil.
6) Bake in oven for 15-20 minutes, or until burgers reach an internal temperature of 160 degrees.
7) Remove from oven and let sit for 5 minutes.
8) Transfer to serving dish and serve immediately.

NOTE: You can double this recipe and freeze one batch for later use. Cook the dish prior to freezing. Place in plastic dish and cover with lid or foil. Vegetarian Boca Burger Salisbury Steak can be frozen for up to 2 months.
