Spanish Rice

This vegetarian crock pot recipe is delicious served as a main course, or as a side dish with your favorite protein source. Add a tossed salad for a well balanced meal. Although the recipe does not call for meat, you could add browned ground beef or a vegetarian meat crumble. This vegetarian Spanish rice is a perfect dish to take to a covered dish dinner.

Vegetarian Crock Pot Spanish Rice

1 medium sized onion, chopped

1 medium sized green pepper, chopped

1 (28) ounce jar chunky style spaghetti sauce

1/2 cup water

2 teaspoons chili powder

1 (4) ounce can diced green chilies, drained

1 cup long grain rice (white or brown)

1/4 grated parmesan cheese

Chop the onion and the green pepper into bite sized pieces. Place in an ungreased four quart crock pot. Stir in one 28 ounce jar of chunky style spaghetti sauce, 1/2 cup of water, the chili powder, and the drained green chilies. Add one cup uncooked long grain rice (white or brown). Stir all the ingredients together to mix well. Sprinkle 1/4 cup grated parmesan cheese evenly over the top. Place the cover on the crock pot. Cook on low for three hours or on high for six to eight hours. Do not stir during the cooking process. The rice will absorb the spaghetti sauce and water, and will be perfectly cooked. Serve directly from the crock pot.
