Salad is Not the Only Meal Vegetarians Can Eat

Are you a vegetarian looking for a few new meal ideas? I recently went on the Atkins Diet and although I can eat meat, I found a few recipes without it that are perfect for the vegetarian lifestyle.

Spinach Soufflé

14 oz spinach, rinsed and drained

1 oz butter

1 teaspoon garlic

1 small onion, chopped

Salt and pepper to taste

Dash nutmeg

3 egg yolks

2 tablespoons double cream

3 tablespoons grated parmesan cheese

½ teaspoon lemon juice

Melt the butter and sauté the garlic. Add onion and cook until soft. Add spinach, salt and pepper and nutmeg

Cook for about 3 minutes and remove from flame.

Beat egg yolks and cream and stir into mixture added cheese. Put into soufflé dish and cook at 400 degrees Fahrenheit for 30-35 minutes. Wait for it to rise and is firm to the touch. I can't have it with bread, but if you can, it is wonderful.

Spinach Pancakes

1 ½ lbs spinach

½ oz butter

1 small onion

grated nutmeg

1 oz plain flour

2 eggs

8 oz water

1 tablespoon cream

Pinch of salt

Cooking oil

Grated cheese of your liking

This one is not allowed on my diet, but it is a great vegetarian breakfast.

Rinse spinach and let dry. Melt butter in saucepan. Mix together spinach, onion, salt and nutmeg. Pour in heated pan. Cook over low heat for about 10-12 minutes.

Beat the flour with eggs and 4 oz of the water. Then stir in the remaining water and the cream. Should make a smooth batter. Cook the batter in oil and turn when brown. Spread the spinach mixture over ¼ of each pancake and fold in half. Remove and moce to ovenproof dish. Top with cheese and bake for 10-15 minutes at 400 degrees fahrenheit. Cheese should bubble.

Red Cabbage and Potato Au Gratin

2 lbs of potatoes, peeled, boiled and cut in half

½ oz butter

1 small onion

12 oz red cabbage

Pinch of curry

Pinch of pepper

Pinch of paprika

Put potatoes in casserole dish greased. Melt butter with onion until soft. Remove half of it and add cabbage, curry, pepper and paprika. Cook about 3 minutes. Spoon over potatoes and top with the other half of removed onion mixture. Brown under grill.

Cauliflower Omelet

1 small cauliflower cut into florets

Salt to taste

2 tablespoons double cream

1 egg yolk

1 tablespoon grated parmesan cheese

Pinch of basil

6 eggs

Oil for frying

Shredded cheese or your choice

Place florets in a pan and cover just enough water to boil. Add a pinch of salt, cream and nutmeg. Bring to a boil. Cook on low for 20 minutes. Drain and puree or blend. Add egg yolk, parmesan cheese and basil and mix well. Beat the 6 eggs with salt to taste. Heat oil in frying pan. Add egg mixture and when brown add cauliflower mixture and turn over. Cook for about 2-3 minutes.

Stuffed Green Peppers

4 green peppers

6 tomatoes, skinned and diced

1 tablespoon dill

Salt to taste

Black pepper to taste

4 eggs

Ground paprika

Cut top of pepper and remove seeds. Rinse and drain. Season the tomatoes with dill, salt and pepper. Stuff mixture into peppers. Crack an egg into each pepper top and sprinkle with salt and paprika. Place in ovenproof dish and cook at 425 degrees Fahrenheit for about 12 minutes. These are really awesome.
