Spray skillet with cooking spray and heat on medium.2
Beat 3 eggs with a fork in a bowl and pour into heated skillet. Cook until omelet is just about set.3
Add 1 thin slice of Velveeta cheese. A little goes a long way! Fold one half of omelet over the cheese and cook for a minute or so until the cheese is melted. You can also add other ingredients such as ham, green peppers, etc.4
Take a spatula and put the omelet on a plate. Turn off the stove.Tip
Velveeta cheese melts very quickly so add it just before the omelet is set.

The Velveeta makes it super-cheesy :)
Sounds perfect too for a cold winter or fall day.
We have done this with regular cheese but never Velveeta :) cheers!
