Velveeta Texas Caviar

Black-eyed peas are a Southern "Good Luck" tradition on New Years Eve. This Velveeta Texas Caviar is a terrific way to spread the luck amongst your party guests.

You need:

2 rolls (1 lb each) hot ground sausage

3 cans (15oz.) of Black-eyed peas, drained

1 brick (16oz) Mexican Velveeta Cheese, cubed

1 brick (32oz) Regular Velveeta Cheese, cubed

Cajun Spice to taste

Chili Powder to taste

Crumble and brown the sausage in a large skillet. Cook until it is done all the way through. Place sausage, black-eyed peas, and cheeses into a large crock pot. Heat on medium, until cheese is melted. Add spices, stir. Reduce heat to low.

Serve in crock pot, with a large spoon. Surround the pot with tortilla chips and large corn chips.

Your guests can make Texas nachos, by spooning the dip onto a pile of tortilla chips. Or they can spoon the dip onto their plates and scoop it up with the large corn chips.

Be sure you have plenty of cold drinks on hand; this is not for the faint of heart, or someone who doesn't like spicy food.

However, if you are inviting people to your New Year's Eve party who don't like the heat this dish puts out, you can tone it down. Use only Regular Velveeta Cheese, and regular sausage; or any combination which will give you the desired spiciness. Don't leave out the chili powder, and Cajun spice, that gives it the Texas taste.
