My husband loves corned beef and cabbage, but I hate how long it takes to prepare it! So, last year I came up with a VERY simple way, that is still delicious, to cook an awesome pot of corned beef and cabbage. I get everything together and prepped and then just throw it in my crock pot, and presto I can go about my day without having to babysit a pot of food, which is great because I have 2 youngsters that acquire quite a bit of attention!
Here's a list of ingredients that you will need:
· 2 corned beef briskets - I like to get the ones that are already seasoned
· 1 head of cabbage, cut into wedges
· 4 large potatoes, cut into cubes
· 3 carrots, sliced
· 1 onion, cut into cubes
Place corned beef in crock pot and add 1 can of beef broth or 1 cup water.
Add the rest of the items and cook on low 10-12.
Use salt & pepper to taste.
