Recipe for making Father's Day vegan empanadas. Dough: 1 cup flour 1/2 cup water pinch of salt Knead together until a smooth, pliable dough is formed, adding a bit more flour as needed so dough is not too sticky. Filling: 1/2 cup tofu 1/2 cup bean (chick pea, black bean, lentils, etc.) Seasonings to taste (garlic, adobo, cumin, annato, etc.) Mash all ingredients together to get a ground beef-like texture. Roll out a golf ball size piece of dough, use saucer to guide knife to cut perfect circle. Separate dough from cutting surface, put golf ball size filling portion in center, fold in half, and press edges together. Use fork time to seal edges. Fry in hot oil until golden brown and enjoy!
