Peel 3 apples. Cut into large chunks. Chop up in a food processor. Place ½ cup of lemon juice and 1 ½ cups of water in a pot. Turn on heat to high. Boil apples, then cover, and simmer for 5 minutes. Strain out water. Place jumbo biscuits into a large casserole dish and spread out to cover bottom. Spread apples over biscuits. Top with ¼ cup of brown sugar and 2 tbsp of cinnamon. Bake for 20 minutes at 350 degrees. This is a great dessert to serve at Christmas or other holidays.
