How to Melt, Mold, Dip and Mix Chocolate
Time Lapse Video Tutorial on Melting Chocolate, Molding Candy, Dipping Fruit and Mixing Nuts
This video show how a medium pot and stainless steel bowl will create a double boiler. Use a double boiler if you have one. The pot should have less than an inch of water and the bowl for melting chocolate should not touch the water in the pot. The amount of melted chocolate used will determine the amount of vegetable shortening. 1 cup chocolate chips 1 tablespoon vegetable shortening Vegetable shortening causes chocolate to melt easier after chilling. Mix well with every addition adding only what is needed. Be sure the hardware is dried thoroughly and free from any liquids. Water and melted chocolate do not mix. Place chocolate chips and shortening in bowl and place bowl over the pot. Set stove to the lowest possible setting, do not boil water. Melting chocolate slowly, will achieve the best results. When chocolate begins to melt it will appear glossy, stir occasionally throughout heating until chocolate is smooth and creamy, usually about 30 minutes.
