Labor Day Appetizer Recipe: Open-Faced Norwegian Salad

An easy-to-make Labor Day Appetizer Recipe called "Open-Faced Norwegian Salad." I learned about this from a Norwegian family I stayed with the summer of 1985. They also call it Italian Salad. Mix together 2 to 3 grated carrots, 10 ounces of chopped cabbage or chop up ½ head of cabbage, and chopped up 2 to 3 slices of ham. The ham is optional. Add lots of mayo - approximately 1 2/3 cup will do. Sprinkle with paprika and parsley flakes. Stir. Serve over fresh sliced French or Italian bread. This is absolutely delicious and healthy too!
