Use Condensed Tomato Soup Along with a Lot of Tomatoes

Canned tomato soup is good, but it can be made much heartier and better tasting with the addition of a lot of fresh garden tomatoes. Prepare condensed tomato soup according to product label instructions, and add a lot of diced tomatoes along with enough salsa to add just the right about of flavor and spice. Consider preparing it with milk instead of water, and top the finished dish with seasoned tortilla strips or croutons, a dollop of sour cream, and a sprinkling of finely shredded sharp cheddar cheese. This thick, rich soup will taste like homemade, but it will take less than twenty minutes to prepare.

Use Tuna or Chicken Salad to Prepare Stuffed Tomatoes

Also required is a lot of garden-fresh tomatoes. Prepare each tomato by coring and cutting them into quarters. Place the roast in the crock pot, and slice the onion into rings. Pour the entire jar of peppers into the crock pot, including the liquid. Top the meat with a lot of tomatoes, and season it with garlic powder and oregano. Use as many tomato wedges as desired. They will help tenderize the roast as it cooks. Once the roast is done, shred it in a pan using two forks, and serve this shredded Italian beef on crusty Italian rolls. Everyone will love it a lot!

    Great ideas, Crystal. I eat tomatoes the same way some people eat apples. I love slice tomato sandwiches (sandwiches with nothing but tomatoes and Miracle Whip and maybe lettuce if I have any). I don't care much for tomato juice, though.

    Don't forget ketchup making! I once boiled down a full bushel of tomatoes (35 pounds) to make a paltry 8 ounces of ketchup. It definitely used up the surplus tomatoes for sure :)
