What is a Memorial Day barbecue without a good hamburger?. To bulk up your hamburger without adding fat, add sauteed vegetables to the meat before forming patties. Some great vegetables to use are mushrooms, onions, carrot, celery, red, yellow, or green peppers, and eggplant. Use any other vegetable that you think would be good. This trick is also good for meatloaf and meatballs..
Instead of a fattening hamburger bun, try wrapping your burger in a lettuce leaf. Or try one of these low point ideas:.
Weight Watcher's Whole Wheat hamburger roll - 1 point per bun
Wonder Lite Hamburger Bun - 1 point per bun
Weight Watchers English Muffin - 1 point per muffin
Alternative Bagels - 1 point per bagel (these are delicious!)
Nature's Own Whitewheat Hamburger Rolls - 1 point per bun
For a low point Hot Dog - Try National Hebrew's 97% Fat Free All Beef Hot Dog. - they are 1 point per hot dog and are surprisingly tasty.
Some low point hot dog buns::
Kroger Lite Wheat Hot Dog Buns - 1 point per bun
Sunbeam Whole Wheat Lite Hot Dog Buns - 1 point per bun
Merita's Lite Wheat Hot Dog Buns - 1 point per bun
Where vegetables are concerned, keeping it simple means keeping it low point. Here are two examples of simple low point vegetables.
Cucumber Salad
0 points
Ingredients:
2 large cucumbers sliced
1/3 cup scallions minced (use some of the green tops)
1/4 cup white vinegar
½ single serving pack of Splenda
Combine all ingredient in a serving bowl. Add pepper to taste. Chill.
Grilled Tomatoes with Parmesan Cheese
Thickly slice tomatoes. Salt & pepper slices. Sprinkle Parmesan cheese on each slice. Grill until soft but not mushy. I also like to put hot sauce on my slices.
The points on this depends on how much Parmesan cheese you use on each slice.
2 tsp of cheese equals 1 point.
Even desserts can be delicious and low point.
Try this apple-pie-tasting quick snack.
Peel & slice apple. Add Splenda & cinnamon between the slices - add as much as you like. Microwave for 5 minutes. Add FF whipped topping and 2 Tbl of Fiber One Cereal. Yumm!
Here's one of my favorite recipes from Weight Watchers. If you're a fan of Peanut Butter cups, you will love this too.
Frozen Peanut Butter Cups
12 Servings - 2 pts per serving
8 oz. ff cool whip
1/2 cup peanut butter - smooth or crunchy
2 tablespoons chocolate syrup
Line 12 muffin cups with liners. Mix cool whip and peanut butter until well combined. Spoon even portions into muffin liners.
Top each with a swirl of chocolate syrup. Freeze 6-8 hours until frozen.
Once solid, remove the peanut butter cups and put into individual bags until you are ready to eat them.
Also try making 24 with mini muffin pans. These are 1 pt each. These are softer and melt in your mouth.
You can still have a great barbecue while on Weight Watchers. Take advantage of the Internet to find great low point grilling ideas and recipes. Go to your local library and check-out Weight Watcher cookbooks. Look for Weight Watcher books at yard sales. Be creative and come up with your own low point recipes. There are several websites that provide on-line point calculators and they are free. The challenge is half the fun of Weight Watchers.
Have a great Memorial Day and enjoy your barbecue!
