Ingredients

Serves 1
4 eggs - large or extra large
1/2 cup spam - chopped finely
4 strips bacon - hickory smoked - cooked
2 links sausage cooked and chopped
1 scallions - chopped
1/2 cup red bell pepper - chopped finely
1/2 cup green bell pepper - chopped finely
1/2 cup yellow onion - chopped finely
2 tbsp garlic powder
1tbsp black pepper
1 tsp salt
1 cup chili - homemade or canned
1 1/2 cups shredded cheese - cheddar, longhorn, colby or jalapeno jack
1/4 cup cooking oil or butter

Directions for Western Redneck Omelet

Beat Eggs and Add Seasonings, Chopped Vegetables and Chopped Spam
In a mixing bowl, combine eggs, chopped scallions, chopped red and green peppers, chopped onion, chopped spam, garlic powder, black pepper and salt. Mix well.

Pour Egg Mixture In Well-Oiled Pre-Heated Frying Pan and Cook Over Medium Heat
Add cooking oil into frying pan and make sure it completely coats the bottom and sides of the frying pan. Pour in egg mixture. Cook for about 1 minute until it starts becoming firm.

Add Bacon Strips, Chopped Sausage, Chili and Grated Cheese
Place the bacon strips, chopped sausage and chili in the center of the egg mixture. Cover the bacon, sausage and chili with the grated cheese. Gently run spatula around the outer edges and under the omelet to keep it from sticking to the pan.

Fold Omelet Over In Half
When egg mixture on top of omelet is almost dry, fold omelet over in half. Cook for another minute. Flip omelet half over on other side and cook for 1 minute.

Serve and Enjoy
Plate the omelet and serve with hash browns or home fries and toast.
