Prepare a package of couscous according to package directions except substitute the water for either chicken or vegetable broth. While the couscous is setting , heat up some olive oil in a skillet and add several cloves of chopped garlic. Then chop up a large red onion and at least one good size zucchini and toss them in with the garlic and oil. Let them cook for a few minutes while you chop us two or three Italian plum tomatoes. season with some salt and pepper and a little Italian seasoning blend. Throw the tomatoes in withe the zucchini to cook until the vegetables are all tender.
Stir the couscous and if it's too dry add a small amount of olive oil. Then mix the vegetables together with the couscous. Add a handful of grated Parmesan cheese and mix a little more.
Serve hot or cold, either way it's delicious.
